a Collaboration with Sawyer Brewing Company

Toppling Timber, a collaboration with South Dakota-based Sawyer Brewing Company, is big! A blend of bourbon barrel, double-bourbon barrel and bourbon/rye double barrel, this stout finishes like ice cream drizzled with warm fudge, vanilla and sweet bourbon with an extra hint of rye spice in the finish.

Brewmaster Mike Saboe explains it best.

"It's a true exploration of different barrel types and execution. The entire batch started out aging in bourbon barrels, then upon our first sampling, we began to divvy up the batch 3 ways. One remained in the original barrels and the other two portions received a secondary cask finish in two types of casks - bourbon and rye whiskey." He adds, "These three threads - split from the original lineage - allowed us to thoughtfully blend everything back together in way that both amplified and integrated characteristics otherwise unique to their individual processes."
